4-6 pieces chicken (whole or sliced) 1 small onion, sliced 1 jar mango slices 1-2 Tbsp butter or margarine salt, pepper, tabasco sauce to taste
Directions:
Brown chicken on both sides in butter. Set aside. Sauté onion and spices in juice. Return chicken to pan and simmer. Add cut-up mango slices at end and simmer 5-8 more minutes. Serve over rice.
