Ingredients:
12 medium carrots, sliced; cooked until tender

For the White Sauce:

1 small onion, minced
1/4 c. butter
1/4 c. flour
1 tsp. salt
1/4 tsp. dry mustard or 1 tsp. prepared mustard
2 c. milk
1/8 tsp. pepper
1/4 tsp. celery salt
1 envelope Ranch dressing mix
1 small jar processed cheese
Directions:
Preheat oven to 350 degrees. Cook onion in butter; add flour, salt and mustard. Add milk and cook until thick, stirring constantly. Add seasonings and cheese; stir until melted. Pour white sauce over carrots in buttered casserole dish. Sprinkle cracker crumbs on top, if desired. Bake for 30 minutes.
