Ingredients:
Vegetable oil cooking spray
½ lb. 94% fat-free ground beef
¼ C. quick-cooking rolled oats
¼ C. + 4 tsp. ketchup, divided use
½ tsp. garlic powder
½ C. egg substitute
½ C. diced green pepper
½ C. diced onion
Directions:
Preheat oven to 350 degrees F. Spray 4 muffin tin cups with vegetable oil cooking spray. Combine all remaining ingredients except 4 teaspoons ketchup in a medium mixing bowl. Mix until well blended. Divide mixture evenly into 4 portions and press into muffin cups. Use a spoon to make a small indention in the center of each meatloaf. Place a teaspoon of ketchup in each indention. Bake 25-30 minutes or until center is no longer pink. Let stand 2 minutes before removing from pan.
