2 ½ C. cake flour 1 2/3 C. sugar 1 ½ tsp. baking powder 1 ½ tsp. baking soda 1 tsp. salt ¾ C. butter, soft ½ C. buttermilk 1 ¼ C. mashed bananas 1/3 C. additional buttermilk 2 eggs 1 C. pecans, chopped
Directions:
Preheat oven to 350 degrees. Grease and flour bundt pan. Sift flour, sugar, baking powder, soda and salt. Add butter, ½ cup buttermilk and mashed bananas. Beat 2 minutes. Add 1/3 cup buttermilk and eggs. Beat 2 more minutes. Fold in nuts. Bake in well-greased and floured bundt pan for 30-35 minutes. Cool. Invert pan and remove. Sprinkle top with confectioners' sugar.
