1 large sweet potato (about 3/4 pound) 2 Tbsp butter 2 Tbsp brown sugar 2 Tbsp flaked coconut 2 Tbsp maple syrup 2 Tbsp slivered almonds, toasted
Directions:
Peel potato and cut into 1/3 inch slices. Arrange in large skillet and cover with water. Bring to a boil. Cover, reduce heat, and simmer for 10 minutes or until tender. Drain potatoes and place in a bowl.
Melt butter in skillet. Stir in brown sugar, coconut, and syrup. Return potatoes to skillet and cook until thoroughly heated. Turn potatoes to coat with mixture. Arrange potatoes in a serving dish. Sprinkle with almonds. Yield: 2 servings.
