Ingredients:
1 container (16 oz.) low-fat cottage cheese, drained
1 envelope Hidden Valley Salad Dressing Mix
1 C. tomato, chopped
1 C. bell pepper (yellow, red or mix) chopped
1 C. cucumber, diced
1 C. green onions, sliced
1 C. carrot, diced
Directions:
Combine all ingredients well. Cover and chill a few hours before serving.

Note: Make a variation by substituting your favorite vegetables. Try adding some broccoli, cauliflower, red onion, zucchini or yellow squash.
