Ingredients:
1 lb. ground buffalo
1 lb. lean breakfast sausage
2 eggs, slightly beaten
1 can (8 oz.) tomato sauce
½ of a medium onion, finely chopped
½ of a green pepper, finely chopped
¾ c. Ritz cracker crumbs
½ c. Stove Top Stuffing Mix (chicken flavor), crushed
1 tsp. garlic salt
1 tsp. ground mustard
½ tsp. ground black pepper
8 oz. Sharp Cheddar cheese, shredded
Glaze:
1/3 c. brown sugar
1/3 c. ketchup

Directions:
Preheat oven to 350 degrees. In a large mixing bowl, combine all ingredients well. Shape mixture into 2 loaves, and place into a well-greased 9 x 13-inch baking dish. Bake, uncovered, for 45 to 50 minutes. Make glaze by combining brown sugar and ketchup in a small bowl; stir well. Spoon glaze over the top of baked loaves, then return to oven for an additional 15 minutes. Enjoy!
Tip: Crush cracker crumbs and stuffing mix easily by placing them in a zip-top bag. Simply crush them by using a rolling pin, or a large, sturdy can.
