1 c sugar 1/4 c applesauce 2 bananas (1 c) mashed 1/2 c egg substitute, slightly beaten 2 c lowfat biscuit mix (Pioneer) 2 T pecans, finely chopped
Directions:
Preheat oven to 350 degrees. Coat loaf pan with cooking spray. Cream sugar and applesauce. Fold in mashed bananas and egg substitute. Stir well. Gradually stir in biscuit mix. Sprinkle pecans over batter and stir just until blended. Bake for 45 minutes or until toothpick inserted comes out clean. Remove from oven and let stand 10 minutes. Remove from pan and slice.
