Welcome to the Cooking Corner! Chef Joseph from Montereau joined News On 6 at Noon to show us how to make pumpkin muffins.
Ingredients:
1 ¾ cup All-Purpose Flour
1 cup Sugar
½ cup Brown Sugar
1 tsp. Baking Soda
½ tsp. Kosher Salt
2 tsp. Ground Cinnamon
¼ tsp. Ground Cloves
¼ tsp. Ground Nutmeg
2 ea Whole Eggs
15 oz. Pumpkin Puree
½ cup Coconut Oil or Canola Oil
1 tsp. Vanilla Extract
¼ cup Chocolate Chips (optional)
Directions:
· Preheat oven to 375 degrees
· Place twelve muffin liners into a muffin tin
· Measure out dry ingredients: flour, sugars, and spices. Combine in a medium bowl
· In another bowl combine wet ingredients: Eggs, pumpkin, oil, and vanilla extract. Mix until everything is incorporated
· Pour wet ingredients into dry ingredients
· Using a ice cream scoop evenly divide the batter into the muffin liners
· Garnish muffins with chocolate chips if desired.
· Bake for 20-22 minutes or until a toothpick inserted into the center of a muffin comes out clean
