Akaushi Roast Beef Salad

Executive Chef Matt Louviere from Cimarron Meat Company shows how to make an Akaushi Roast Beef Salad.

Ingredients:

1 pound Akaushi Deli Roast Beef, cut into thin strips

4 Portobello Mushroom Caps, sliced into thin strips

4 Celery Stalks, sliced thinly on an angle

¼ Cup Shaved Parmigiano-Reggiano

3 T Extra Virgin Olive Oil

1 Lemon, juiced

¼ C Parsley, rough chopped

Salt and Pepper, To taste

DIRECTIONS:

1. In a large bowl, combine Roast Beef, Mushrooms, Celery and Parmigiano.

2. Drizzle Salad with Olive Oil, Lemon Juice, Salt, Pepper & Parsley. Toss to combine ingredients.

Serve with Crackers or Crusty Bread on side.
