Clafouti

It seems the summer days are here to stay and that means fresh cherries are in season. Judy Allen with Tulsa People has a recipe for Clafouti.

Ingredients:

1/2 c. plus 2 T. flour

1/3 c. sugar

1 1/4 c. whole milk

3 eggs - separated

2 T. unsalted butter

1 lb. black cherries - rinsed and pitted

A few T. dark rum

Confectioners' sugar - for dusting

Directions: 

Heat oven to 375.

Whisk together flour and sugar in a bowl.

Add milk and egg yolks and whisk to make a smooth, runny batter.

In another bowl, whisk the egg whites until stiff and then fold gently into the batter.

Set a 9x9 baking dish in the over to warm.

After a few minutes, pull the dish out and drop in the butter, swirling it around to coat the bottom and sides of dish.

Tip any excess butter into the batter and stir it in.

Pour the batter into the dish and strew the cherries throughout.

Bake until puffed and set, about 30 minutes.

Serve hot, with a sprinkle of rum and a dusting of confectioners' sugar.
