3-4 tilapia filets
1 tablespoon olive oil
salt and pepper
1/4 cabbage, shredded
cilantro and sour cream dressing (recipe follows)
1 avocado, sliced
1 tomato, sliced
4 whole wheat tortillas
1. Marinate tilapia in orange juice for at least 30 minutes.
2. Season with salt and pepper and sauté in olive oil until done. Take off heat and let rest.
3. Toss shredded cabbage with the dressing. Set aside.
4. Slice avocado and tomato
5. Place a filet, a small amount of the cabbage mixture, 2 slices of tomato, and two slices of avocado on each tortilla. Fold in half like a taco.
cilantro and sour cream dressing
2 tablespoons cilantro, chopped
1 tablespoon light mayonnaise
2 tablespoons light sour cream
lime juice to taste
¼-½ teaspoon sugar
salt and pepper to taste
Whisk all ingredients together in a small bowl.
