Terry Hood's Spinach, Apple and Walnut Salad

2 Golden Delicious apples, diced in large pieces

4 Tbsp lemon juice

2 (5 oz) packages (8 cups) baby spinach leaves

3 Tbsp extra-virgin olive oil

1 Tbsp apple cider vinegar

2 Tbsp honey

2/3 cup crumbled goat cheese

1/2 cup chopped walnuts, toasted

salt and pepper to taste

Toss apples with 2 Tbsp lemon juice. Place spinach in large bowl, removing long stems and bruised leaves. Whisk together remaining lemon juice, olive oil, vinegar, honey, salt and pepper. Toss spinach with apples and dressing.

Divide between 4 bowls and top with cheese and walnuts.
