Butter-flavored cooking spray 1 medium onion, diced 2 cloves garlic, minced 2 cans (15 oz. each) black beans, undrained 2 tsp. jalapeno juice 2 finely minced jalapeno slices, seeds removed 1 can (11.5 oz.) vegetable juice blend Juice of one medium lime 2 T. finely chopped cilantro 2 T. dried parsley 1/4 tsp. cumin 1/8 tsp. cayenne pepper 2 large fresh tomatoes, diced 3 C. hot cooked rice
Directions:
In a large saucepan sprayed with butter-flavored cooking spray, sauté onion and garlic over medium heat until onion is clear. Add remaining ingredients except for tomatoes and rice. Simmer until heated throughout. Add tomatoes and simmer 3-5 more minutes. Serve over rice.
