1 deep dish pie crust (5g fat per 1/8 crust)1 envelope unflavored gelatin 1/4 C. cold water 1 box (1 oz.) sugar-free white chocolate pudding mix 1 3/4 C. skim milk 3/4 C. sugar 2 C. fat-free whipped topping, divided use 1/2 C. fat-free plain yogurt 1/4 C. key lime juice
Directions:
Bake pie crust according to package directions. Cool completely. Sprinkle gelatin over cold water in a small bowl. Let stand 2 minutes. Stir. Microwave on high 40 seconds and stir again. Let stand 2 more minutes or until gelatin is completely dissolved. Cool. Combine pudding mix and milk in a large mixing bowl. Beat until smooth. Blend in sugar, 1/2 cup whipped topping, yogurt, key lime juice and cooled gelatin mixture. Chill 2 hours or overnight. Top with remaining whipped topping.
