2 pounds broccoli florets1/3 cup green onion, sliced 1/2 cup red bell pepper 1/4 cup toasted pecans, almonds or walnuts 1/4 cup real bacon bits (30 calories per tablespoon) 1/2 cup golden raisins 2/3 cup fat-free mayonnaise 3 tablespoons tarragon vinegar 1/4 cup sugar substitute (maltodextrin and sucralose) 1/2 teaspoon cinnamon
Directions:
1. Blanche broccoli in boiling water for 2 minutes. Drain and rinse immediately with cold water. Place in a large mixing bowl. Add onion, bell pepper, nuts and bacon.
2. Submerge raisins in hot water 5-10 minutes until softened. Remove from water and pat dry. Add to broccoli mixture.
3. In a small mixing bowl, whisk together mayonnaise, vinegar, sugar substitute and cinnamon. Pour mayonnaise mixture over broccoli and toss until evenly coated. Chill one hour or until ready to serve.
