Carrot Molasses Cookies

3 1/2 dozen
1 pkg Carrot Cake Mix
1/4 cup butter or margarince softened
2 tablespoons light molasses, honey or maple syrup
2 eggs or egg substitute
1/2 cup chopped nuts, optional
1 tub cream cheese frosting (ready to serve)
Place half of mix in bowl. Add butter, molasses and eggs. Beat with electric mixer until smooth. Stir in remaining cake mix. Cover and chill in refrigerator for 2 hours. Heat oven to 375 degrees. Coat cookie sheet with cooking spray. Drop dough by rounded spoonfuls 2-inches apart on cookie sheet. bake 8 minutes or until edges are lightly browned. Center will be soft. Place on wire rack to cool. Frost if desired.
