1 pkg Carrot Cake Mix 1/4 cup butter or margarince softened 2 tablespoons light molasses, honey or maple syrup 2 eggs or egg substitute 1/2 cup chopped nuts, optional 1 tub cream cheese frosting (ready to serve)
Directions:
Place half of mix in bowl. Add butter, molasses and eggs. Beat with electric mixer until smooth. Stir in remaining cake mix. Cover and chill in refrigerator for 2 hours. Heat oven to 375 degrees. Coat cookie sheet with cooking spray. Drop dough by rounded spoonfuls 2-inches apart on cookie sheet. bake 8 minutes or until edges are lightly browned. Center will be soft. Place on wire rack to cool. Frost if desired.
